Banana Cupcake Recipe

Banana Cupcake Ingredients

  • 2 1/4 cups flour
  • 1 1/4 cup sugar
  • 2 1/2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1/2 cup shortening
  • 2 unbeaten eggs
  • 1 1/2 cup mashed bananas
  • 1 Tbsp. vanilla

Banana Icing Ingredients

  • 1 Tbsp. butter
  • 1/2 mashed banana
  • 1 Tbsp. lemon juice
  • 1 cup powdered sugar

Directions for Banana Cupcakes

Sift together flour, sugar, baking powder, baking soda and salt.  Add shortening, eggs and 1/2 cup mashed bananas.  Beat for two minutes with electric mixer on medium speed.  Add remaining 1 cup of bananas and vanilla and beat for one more minute.  Pour in paper lined muffin pan, filling each cup at least 3/4 full.  Bake at 350 degrees for 25 minutes.  Makes 1 dozen Banana Cupcakes.  Allow to cool before icing.

Fudge Cupcake Recipe

Fudge Cupcake Ingredients

  • 1 3/4 cup sugar
  • 1 cup all-purpose flour
  • 4 eggs
  • 4 squares semi-sweet chocolate
  • 1 cup margarine
  • 1 tsp. vanilla
  • 1 1/2 cup chopped pecans

Fudge Cupcake Directions

Combine sugar, flour and eggs.  Melt chocolate and margarine in a saucepan and stir in nuts.  Combine sugar mixture, chocolate mixture and vanilla: blend, do not beat.  Pour into paper lined muffin tins and bake at 325 degrees for 30 minutes.  Makes two dozen Fudge Cupcakes.

Fruit Cobbler Recipe

Fruit Cobbler Ingredients

  • 1 stick butter or margarine, melted
  • 1 cup sugar
  • 1 cup flour
  • 2 tsp. baking powder
  • 1 cup milk
  • 1 can of fruit for pie filling (apple, peach, cherry, etc.)
  • 1 tsp. apple pie spice or cinnamon mixed with sugar

Fruit Cobbler Direction

Pour melted butter in a deep round casserole dish.  Add batter made from sugar, flour, baking powder and milk.  Empty fruit filling on top of batter.  No need to stir.  Add spice.  Bake at 350 degrees for 30 to 40 minutes, until brown on top.  Makes 6 servings of cobbler.

Buttermilk Pie Recipe

Buttermilk Pie Ingredients

  • 1 stick butter
  • 1 cup sugar
  • 3 eggs
  • 1 cup buttermilk
  • 4 Tbsp. flour
  • 1 tsp. vanilla
  • 1 unbaked pie crust

Buttermilk Pie Directions

Cream butter and sugar.   Add eggs and beat.  Add buttermilk, flour and vanilla.  Mix well.  Pour into pie crust and bake at 350 degrees for about 45 minutes until pie is set and golden brown.

Mango Sorbet Recipe

Mango Sorbet Ingredients

  • 2 1/4 cups chopped, ripe mango
  • 1/2 cup orange juice
  • 1/4 cup honey
  • grated lime rind

Mango Sorbet Directions

Mix mango, orange juice, and honey in a blender until smooth.  Pour mixture into a 9 inch square pan and freeze until firm.  Garnish with lime rind.  Makes 5 servings of Mango Sorbet.

Irish Cake Recipe

Irish Cake Ingredients

  • 2 cups flour
  • 2 cups sugar
  • 2 tsp. baking powder
  • 1 tsp. cinnamon
  • 1/2 cup vegetable oil
  • 1/2 cup milk
  • 2 eggs
  • 1 can cheery pie filling

Irish Cake Directions

Mix everything except cherry pie filling.  Fold in cherry pie filling.  Bake in an 8 X 10 inch pan for 1 hour at 325 degrees.  Cool and cut into squares.  Serve Irish Cake warm or cold and serve with ice cream or whipped cream.

Gingersnap Recipe

Gingersnaps Ingredients

  • 3/4 cup shortening
  • 1 cup sugar
  • 1/4 cup dark molasses
  • 1 beaten egg
  • 2 cups sifted flour
  • 1/4 tsp. salt
  • 2 tsp. baking soda
  • 1 tsp. cinnamon
  • 1 tsp. cloves
  • 1 tsp. ginger
  • granulated sugar

Gingersnaps Directions

Cream shortening and sugar.  Add molasses and egg.  Add sifted dry ingredients and mix well.  Roll into small balls and dip into granulated sugar.  Place 2 inches apart on ungreased cookie sheet.  Bake at 375 degrees for 10 minutes.  Makes 4 dozen Gingersnaps.

Chocolate Coffee Cake Recipe

Chocolate Coffee Cake Ingredients

  • 2 cups sugar
  • 3/4 cup shortening
  • 2 eggs
  • 1 cup buttermilk
  • 2 cups flour
  • 1/2 cup cocoa
  • 2 tsp. soda
  • 1/4 cup hot coffee
  • 1 tsp. vanilla
  • 1/4 tsp. salt

Chocolate Coffee Cake Directions

Cream shortening and sugar.  Add eggs and mix well.  Add flour and buttermilk alternately, ending with the flour.  Next, add cocoa and salt.  Put baking soda in a cup and pour 1/4 cup of hot coffee.  While it’s fizzing, pour this into creamed mixture and mix well.  Add vanilla and put into 3 greased layer pans.  Bake at 350 degrees for 25 to 30 minutes.  Cover with chocolate frosting if desired.

Pound Cake Recipe

Pound Cake Ingredients

  • 2 cups butter
  • 3 cups sugar
  • 10 eggs
  • 1 tsp. cream of tartar
  • 1/2 tsp. salt
  • 1 Tbsp. vanilla

Pound Cake Directions

Cream butter and sugar.  Sift flour, cream of tartar and salt together.  Add 1 egg to creamed butter and sugar mixture, mix well.  Continue until all ingredients have been used.  Add vnilla.  Place batter in large angel food cake pan.  Bake at 300 degrees for 90 minutes.

Almond Cookie Recipe

Almond Cookie Ingredients

  • 1 cup margarine, softened
  • 1 1/2 cup sugar
  • 2 eggs
  • 1 tsp. almond extract
  • 1 tsp. vanilla extract
  • 2 1/2 cups flour
  • 2 tsp. baking powder
  • 1/2 tsp. salt

Almond Cookie Directions

Cream margarine, sugar, eggs and extracts until fluffy.  Add flour, baking powder and salt.  Mix well.  Droup dough by teaspoonfuls onto greased cookie sheet about 2 inches apart.  Bake at 375 degrees for 8 – 10 minutes.  Makes about 8 dozen Almond Cookies
