Pineapple Bar Cookie Recipe

Pineapple Bar Cookie Ingredients

  • 1 cup butter or margarine
  • 2 cups flour
  • 1/8 tsp salt
  • 2 egg yolks, beaten
  • 1 can (20 oz.) crushed pineapple, undrained
  • 1 cup sugar
  • 2 tbsp. cornstarch

Directions for Pineapple Bar Cookies

Combine butter or margarine, 1 cup sugar, flour and salt for pie crust, using pastry blender or fingers.  Spread about 3/4 of crumb mixture over bottom of a 13 X 9 inch cake pan.  Bake at 350 degrees for 15 minutes.
Combine remaining ingredients in a saucepan and cook, stirring constantly, until thickened.  Pour pineapple mixture over baked layer.  Sprinkle remaining crumbs over top.  Bake at 350 degrees for 25 minutes.  Allow Pineapple Bars t0 cool before cutting.

Lemon Bar Recipes

Lemon Bar Ingredients

  • 2 sticks butter or margarine
  • 1 1/2 cup flour
  • 1/2 cup powdered sugar
  • 3 eggs, well beaten
  • 1 1/2 cups sugar
  • pinch of salt
  • 3 tbsp. flour
  • juice and grated rind of one lemon

Mix butter, flour and powdered sugar until crumbly, pat into 9 X 12 in. pan, and bake 20 minutes at 350 degrees.  Do not cool.
Beat the rest of the ingredients together well.  Pour over crust and bake for 20 minutes at 350 degrees.  Sprinkle with powdered sugar immediately.  Cut Lemon Bars into squares when cool.

Peanut Butter Rice Crispie Bar Recipe

Peanut Butter Rice Crispie Bar Ingredients

  • 1 cup light corn syrup
  • 1 cup peanut butter
  • 12 oz. chocolate chips
  • 1 cup sugar
  • 6 cups Rice Crispies
  • 6 oz butterscotch chips

Directions for Peanut Butter Rice Crispie Bars

In a 2 quart saucepan, mix corn syrup and sugar on medium heat.  Bring to a low boil.  Mixture will be clear.  Remove from heat.  Mix in peanut butter and stir until completely melted.  Add Rice Crispies.  Mix until completely covered.  Pour into a greased 13 X 9″ pan.  Melt both chips and pour over bars and spread.  Cut with a sharp knife when chocolate hardens.  Makes 24 bars.

Fruit Chew Recipe

Fruit Chew Ingredients

  • 1 cup dates
  • 1 cup nuts
  • 1/2 cup raisins
  • 1 cup brown sugar
  • 3/4 cup flour
  • 1 tsp baking powder
  • 2 eggs beaten
  • 1/2 tsp salt
  • 1 tsp vanilla


Directions for Fruit Chews

Mix dry ingredients then add vanilla, dates, nuts and eggs.
Mix well.
Bake in a 7″ X 11″ pan at 350 degreesfor 11 minutes.
Cut Fruit Chews in squares or strips and sprinkle with powdered sugar.

Caramel Candy Bars

Caramel Candy Bar Ingredients

  • 1 (14 oz.) package caramel candies
  • 1/2 cup milk
  • 2 cups flour
  • 2 cups quick oats
  • 1 1/2 cup brown sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 egg
  • 1 cup margarine or butter, softened
  • 1 (6 oz.) package chocolate chips
  • 1 cup chopped nuts

Directions for Caramel Candy Bars

Heat oven to 350 degrees.  Grease rectangular 13 X 9 X 2″ pan.  Heat candies and milk in a 2 quart sauce pan over low heat, stirring frequently until smooth; remove from heat.  Mix flour, oats, brown sugar, baking soda, salt and egg in large bowl.  Stir in margarine or butter with fork until crumbly.  Press half of the mixture in pan.  Bake 10 minutes, then sprinkle with chocolate chips and nuts.  Drizzle with caramel over top.  Sprinkle remaining crumbly mixture over top.  Bake 20 to 25 minutes.  Cool 30 minutes.  Loosen edges from side of pan.  Cool completely.  Cut into bars (2 X 1″).
Makes 54 Caramel Candy Bars.

Chocolate Chip Bar Cookie Recipe

Chocolate Chip Bar Cookie Ingredients

  • 1 cup butter or margarine
  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 2 egg yolks
  • 1/2 teaspoon baking soda dissolved in 1 tablespoon water
  • 2 cups flour
  • 1 teaspoon salt
  • 1 cup chocolate chips
  • 1 cup finely chopped nuts

Directions for Chocolate Chip Bar Cookies

Cream butter and sugar; add egg yolks and beat.  Add baking soda and then dry ingredients, mixing well.  Press into 11 X 15″  pan and spinkle with chocolate chips and nuts and press lightly into batter.  Make meringue of 2 beaten egg whites and 3/4 cup brown sugar.  Spread on top of other ingredients and bake for 25 to 30 minutes at 350 degrees.  Cool and cut into bars.

Chocolate Chip Crumble Bar Recipe

Chocolate Chip Crumble Bar Ingredients

  • 2 cups flour
  • 2 cups brown sugar
  • 1/4 teaspoon salt
  • 1/2 cup butter
  • 1 cup milk chocolate or semi-sweet chocolate chips
  • 1 egg
  • 1 cup milk
  • 1 1/2 teaspoon vanilla
  • 1/2 teaspoon baking soda

Directions for Chocolate Chip Crumble Bars

Mix flour, brown sugar, butter and salt like pie crust.  Reserve 1 cup of crumb mixture.  To the remaining, add last ingredients, then beat.  Pour into pan.  Add 1 cup chocolate chips to reserved crumb mixture.  Sprinkle on top.  Bake in a 9 X 13″ pan at 350 degrees for 30 minutes.
