Lemon Cookie Recipe

Lemon Cookie Ingredients

  • 1 cup sugar
  • 1/2 cup shortening
  • 1 unbeaten egg
  • 1/2 tsp. vanilla
  • 2 tsp. lemon flavoring
  • 2 cups flour
  • 1/4 tsp. salt
  • 1/2 tsp. baking soda
  • 2 Tbsp. milk

Directions for Lemon Cookies

Cream sugar and shortening.  Add egg and flavorings, mix well.  Sift flour, baking soda and salt together, mix with preceding.  Stir in 2 tablespoons milk,  Moisten hands with shortening and form dough into small balls.  Place balls on baking sheet 2 inches apart.  Flatten with flat-bottomed glass dipped in sugar as each cookie is pressed.  Bake at 400 degrees for 10 minutes.  Makes about 6 dozen Lemon Cookies.

Raspberry Cookie Recipe

Raspberry Cookie Ingredients

  • 1 stick butter
  • 1/3 cup brown sugar
  • 1 cup flour
  • 1 egg, separated
  • 1 tsp. vanilla
  • 1/2 cup chopped nuts
  • 1/2 cup raspberry jam

Directions for Raspberry Cookies

Cream butter with brown sugar.  Stir in flour, egg yolk and vanilla.  Make into small balls.  Dip balls in lightly beaten egg whites and roll in chopped nuts.  Put on a greased cookie sheet and bake at 350 degrees  for 6 minutes.  Remove from the oven and make a dent in cookie balls with a measuring spoon and add jam in center.  Bake 10 minutes longer.  Makes 3 dozen cookies.

Coconut Oatmeal Cookie Recipe

Coconut Oatmeal Cookie Ingredients

  • 1 cup white sugar
  • 1 cup brown sugar
  • 1 cup coconut
  • 1/2 tsp. salt
  • 1 cup flour
  • 2 eggs
  • 1 tsp. vanilla
  • 1 tsp. baking soda
  • 4 cups oatmeal (quick)
  • 1 cup melted shortening

Directions for Coconut Oatmeal Cookies

Cream sugar and eggs.  Add shortening, then flour with salt and baking soda.  Add vanilla, coconut and oatmeal.  Bake at 350 degrees for 10 to 12 minutes.

Carrot Cookies Recipe

Carrot Cookie Ingredients

  • 1 cup shortening
  • 3/4 cup sugar
  • 2 eggs
  • 1 cup carrots, cooked and mashed
  • 2 cups flour
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 3/4 cup shredded coconut
  • 1 cup pecans, chopped
  • 1/2 cup candied green cherries, sliced (optional)

Orange Butter Icing

  • 3 Tbsp. soft butter
  • 1 1/2 cups confectioners’ sugar
  • 2 tsp. grated orange peel
  • 1 Tbsp. orange juice

Directions for Carrot Cookies

Mix shortening, sugar, eggs and carrots.  Blend in flour, baking powder and salt.  Stir in coconut, pecans and cherries.  Drop dough by teaspoonful about 2 inches apart onto lightly greased  baking sheet.  Bake at 400 degrees for 8 to 10 minutes or until done.  Immediately remove from baking sheet and allow to cool before frosting.
For icing, blend butter and sugar, stir in orange peel and juice.  Beat until icing is smooth.  Recipe makes 4 dozen cookies.

M&M Cookies

M&M Cookie Ingredients

  • 1/2 cup shortening
  • 1/2 cup brown sugar
  • 1/2 tsp. vanilla
  • 1/4 tsp. water
  • 1 egg
  • 1 1/4 cup flour
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 3/4 cup M&Ms

Directions for M&M Cookies

Blend shortening and sugars.  Blend in vanilla, water and eggs.  Sift remaining dry ingredients together and add to the sugar and egg mixture.  Mix well.  Stir in M&Ms.  Drop by teaspoon onto an ungreased cookie sheet.  Bake at 350 degrees for 10-12 minutes or until golden brown.  Makes about 3 dozen M&M cookies.

No Bake Chocolate Cookies Recipe

No Bake Chocolate Cookies Ingredients

  • 2 cups sugar
  • 1/4 cup margarine
  • 4 Tbsp. cocoa
  • 1/2 cup milk
  • 1 tsp. vanilla
  • 1/2 tsp. salt
  • 1/2 cup peanut butter
  • 3 cups dry oatmeal

Directions for No Bake Chocolate Cookies

Combine sugar, margarine, cocoa and milk in a large saucepan.  Boil 1 minute, stirring constantly.  Add vanilla, salt, peanut butter, and oatmeal.  Stir thoroughly to combine all ingredients.  Drop by tablespoonfuls onto waxed paper.

Praline Cookies Recipe

Praline Cookies Ingredients

  • 1/2 cup butter
  • 1 1/4 cup brown sugar
  • 1 egg
  • 1/2 tsp. baking soda
  • 1 3/4 cups flour
  • 1 tsp. vanilla
  • 1 cup pecan

Directions for Praline Cookies

Cream butter, add sugar and egg.  Blend, then add flour, vanilla and nuts.  Mix well.  Shape into walnut size balls.  Place on a buttered cookie sheet and flatten to 1/8 inch thick.  Bake at 375 degrees for 12 minutes.

Chocolate Crumble Bars Recipe

Chocolate Crumble Bars Ingredients

  • 1/2 cup butter or margarine
  • 2 eggs
  • 3/4 cup flour
  • 2 Tbsp. cocoa
  • 1/4 tsp. salt
  • 3/4 cup sugar
  • 1 tsp. vanilla
  • 1/2 cup chopped nuts
  • 1/4 tsp. baking powder
  • 6 oz. chocolate chips
  • 1 cup peanut butter
  • 1 1/2 cups rice krispies
  • tiny marshmallows

Chocolate Crumble Bars Directions

Mix, spread in 9 X 13 inch greased pan.  Bake at 350 degrees for 15 to 20 minutes then test.  Sprinkle 2 cups tiny marshmallows over top and bake 3 minutes longer.  Cool.  In saucepan combine chocolate chips, peanut butter and melt over low heat.  Stir in rice krispies and spread over cool bars.

Pumpkin Nut Bars Recipe

Pumpkin Nut Bars Ingredients

  • 1/2 cup shortening
  • 1 cup brown sugar
  • 1 cup flour
  • 1/2 tsp. baking powder
  • 1/4 tsp. ginger
  • 1/4 tsp. salt
  • 1/4 tsp. nutmeg
  • 2/3 cup pumpkin, mashed
  • 2 eggs
  • 1 tsp. vanilla
  • 1/2 cup chopped nuts

Pumpkin Nut Bars Directions

Combine all ingredients except nuts in a large mixing bowl.  Beat for 2 minutes with electric mixer at medium speed.  Fold in nuts.  Spread evenly in a 13 X 9 inch pan.  Bake at 350 degrees for 20 to 25 minutes.  Spread with orange frosting.

Orange Frosting

  • 2 Tbsp. butter
  • 1 Tbsp. grated orange peel
  • 1 1/2 cups powdered sugar
  • 2 Tbsp. orange juice

Blend until smooth

Lime Squares Recipe

Lime Squares Ingredients

  • 1 cup flour
  • 1/2 cup butter
  • 1/4 cup sugar
  • 1/2 cup chopped pecans

Topping

  • 2 eggs
  • 2 Tbsp. lime juice
  • grated rind of 1 large lime
  • 1 cup sugar
  • 2 Tbsp. flour
  • 1/2 tsp. baking powder

Lime Squares Directions

Mix flour, butter, sugar and pecans and press into greased and floured 8 X 12 inch baking dish.  Bake for 15 minutes at 350 degrees.  Beat 2 eggs with fork with 2 tablespoons lime juice, lime rind, sugar, flour and baking powder.  Pour this over baked mixture and bake for 25 minutes in 350 degree oven.  When cool, sprinkle with confectioners’ sugar and cut into squares.  Make 40 lime squares.
