Pecan Pie Recipe

Pecan Pie Ingredients

  • Pie crust
  • 1 cup brown sugar
  • 1/2 cup granulate sugar
  • 1 tablespoon flour
  • 2 eggs
  • 2 tablespoons milk
  • 1 teaspoon vanilla
  • 1/2 cup melted butter
  • 1 cup pecan halves

Directions for Pecan Pie

Mix together sugars and flour, then beat in thoroughly the eggs, milk, vanilla and the melted butter.  Fold in nuts.  Pour in a pastry lined pie plate.  Bake at 375 degrees for 40 to 50 minutes.  Serve Pecan Pie slightly warm.

Pumpkin Pie Recipe

Pumpkin Pie Ingredients

  • 2 cups pumpkin
  • 1 cup white sugar
  • 1 teaspoon salt
  • 3/4 teaspoon ginger
  • 1 1/2 teaspoon cinnamon
  • 1/2 teaspoon allspice
  • 2 eggs
  • 2 cups milk


Directions for Pumpkin Pie

Mix all ingredients thoroughly.  Put in pie crust.  Bake at 375 degrees for 15 minutes.  Lower heat to 350 degrees.  Bake about 30 minutes or until knife comes out clean when inserted in middle of Pumpkin Pie.

Rhubarb Pie Recipe

Rhubarb Pie Ingredients

  • 4 cups diced rhubarb
  • 1 1/4 cup sugar
  • 5 tablespoons flour
  • 1/2 teaspoon cinnamon
  • 1/8 teaspoon salt
  • 1 tablespoon lemon juice
  • 2 tablespoons butter, sliced on top of mixture

Directions for Rhubarb Pie

Pour rhubarb mixture into crust of pie pan and top with a second crust.
Bake at 375 degrees until Rhubarb Pie is nicely brown.

Coconut Cream Pie Recipe

Coconut Cream Pie Ingredients

  • 3/4 cup sugar
  • 1/4 cup corn starch
  • 1/4 teaspoon salt
  • 2 cups milk
  • 3 egg yolks
  • 2 tablespoons butter or margarine
  • 1 teaspoon vanilla
  • 1 cup flaked coconut
  • 1 baked 9 inch pie shell
  • 1 cup whipping cream
  • 1/4 cup powdered sugar
  • Toasted flaked coconut (garnish)

Directions for Coconut Cream Pie

Combine sugar, corn starch and salt in heavy sauce pan; gradually stir in milk.  Cook over medium heat, stirring constantly until thickened.  Cook 1 minute.  Beat egg yolks; gradually stir about 1/4 of hot mixture into egg yolks;  add to remaining hot mixture, stirring constantly.  Cook 1 minute.  Remove from heat, stir in butter, vanilla, and 1 cup coconut.  Pour into shell.  Cool completely, then add powdered sugar until soft peaks form.  Garnish Coconut Cream Pie with toasted coconut.

French Silk Pie

French Silk Pie Ingredients

  • 1 1/2 cup graham cracker crumbs
  • 2 tablespoons sugar
  • 1/2 lb butter (1 stick) melted
  • 3/4 cup sugar
  • 2 squares unsweetened chocolate, melted
  • 1 teaspoon vanilla
  • 2 eggs

Directions for French Silk Pie

Combine crumbs, sugar and butter and press into pie pan.  Bake at 400 degrees for 8 minutes.
Cream butter, sugar, vanilla and melted chocolate, add eggs 1 at a time, beating well after each addition (beat 5 minutes at high speed after each egg).  Pour into prepared crust.  Refrigerate until ready to serve.  Top French Silk Pie with whipped cream and nuts.

Honey Pecan Pie Recipe

Honey Pecan Pie Ingredients

  • 3 eggs
  • 1/3 cup white sugar
  • 1/3 cup light brown sugar
  • 1/4 teaspoon salt
  • 1/4 cup melted butter
  • 1/2 cup honey
  • 1/2 cup light syrup
  • 1 teaspoon vanilla
  • 1 cup pecan halves


Directions for Honey Pecan Pie

Beat eggs; mix in all other ingredients except pecans.  Pour into an unbaked pie shell and arrange pecan halves on filling.  Bake 40 – 50 minutes at 375 degrees or until set and pastry is golden brown.

Pie Crust Recipe

Pie Crust Ingredients

  • 2 cups shortening
  • 5 cups flour
  • 1 teaspoon salt
  • 2 teaspoons sugar
  • 1 beaten egg plus enough ice water to make a cup


Directions for Pie Crust

Blend all ingredients but egg and water with a mixer, then add the egg and water.
Makes 5-7 Pie Crusts.

Meringue Recipe

Meringue Ingredients

  • 1 tablespoon corn starch
  • 2 tablespoons cold water
  • 1/2 cup boiling water
  • 3 egg whites
  • 6 tablespoons sugar
  • 1 teaspoon vanilla
  • pinch of salt

Directions for Meringue

Blend corn starch and cold water in sauce pan. Add boiling water and cook, stirring until clear and thickened. Let stand until completely cold. Beat egg whites with electric mixer on high until foamy. Gradually add sugar and beat until stiff but not dry. Turn mixer to low and add salt and vanilla. Gradually beat in cold corn starch mixture. Turn mixer on high and beat well. Spread meringue over cooled pie filling. Bake at 350 degrees for about 10 minutes or until meringue is browned.

Lemon Meringue Pie Recipe

Lemon Meringue Pie Ingredients

  • 1 baked pie shell
  • 1 1/4 cup sugar
  • 6 tablespoons corn starch
  • 2 cups water
  • 1/3 cup lemon juice
  • 3 eggs (separated)
  • 3 tablespoons butter
  • 1 1/2 lemon extract
  • 2 teaspoons vinegar


Directions for Lemon Meringue Pie

Mix sugar and corn starch together in top of double boiler.  Add 2 cups water.  Combine egg yolks with juice and beat.  Add to rest of mixture and cook until thick over boiling water for 25 minutes.  Add lemon extract, butter and vinegar and stir.
Pour into a pie shell and let cool.  Cover with Meringue and brown in oven at 350 degrees (about 10 minutes).

Apple Pie Recipe

Apple Pie Ingredients

  • Unbaked 9 inch pie shell
  • 7 cups sliced, pared apples
  • 2/3 cups sugar
  • 1/2 teaspoon ground cinnamon
  • 1 1/2 tablespoons butter

Topping Ingredients

  • 1 cup flour
  • 1/2 cup brown sugar
  • 1/4 teaspoon ground cinnamon
  • 1/2 cup butter


Directions for Apple Pie

Combine apples, sugar and cinnamon.  Turn into pie shell.  Dot with butter and sprinkle with topping.  Bake in 400 degree oven for 50 minutes or until apples are tender.  Makes 8 servings of Apple Pie.

Directions for Topping

Combine flour, brown sugar and ground cinnamon.  Cut in butter until crumbly.
