Pineapple Bar Cookie Recipe
Pineapple Bar Cookie Ingredients
- 1 cup butter or margarine
- 2 cups flour
- 1/8 tsp salt
- 2 egg yolks, beaten
- 1 can (20 oz.) crushed pineapple, undrained
- 1 cup sugar
- 2 tbsp. cornstarch
Directions for Pineapple Bar Cookies
Combine butter or margarine, 1 cup sugar, flour and salt for pie crust, using pastry blender or fingers. Spread about 3/4 of crumb mixture over bottom of a 13 X 9 inch cake pan. Bake at 350 degrees for 15 minutes.
Combine remaining ingredients in a saucepan and cook, stirring constantly, until thickened. Pour pineapple mixture over baked layer. Sprinkle remaining crumbs over top. Bake at 350 degrees for 25 minutes. Allow Pineapple Bars t0 cool before cutting.
