Oatmeal Cake Recipe

Oatmeal Cake Ingredients

  • 1 cup white sugar
  • 1 cup brown sugar
  • 1 stick butter or margarine
  • 2 eggs
  • 1 tsp. vanilla
  • 1 tsp. baking soda
  • 1 tsp. cinnamon
  • 1/2 tsp. salt
  • 1 1/2 cups flour
  • 1 cup oats and 1 1/2 cups boiling water, let stand 20 minutes

Directions for Oatmeal Cake

Mix butter, sugars and eggs.  Add dry ingredients, mix.   Add oat mixture, stir.  Pour into 11 X 15 inch greased pan.  Bake at 350 degrees for 25 minutes.

No Bake Chocolate Cookies Recipe

No Bake Chocolate Cookies Ingredients

  • 2 cups sugar
  • 1/4 cup margarine
  • 4 Tbsp. cocoa
  • 1/2 cup milk
  • 1 tsp. vanilla
  • 1/2 tsp. salt
  • 1/2 cup peanut butter
  • 3 cups dry oatmeal

Directions for No Bake Chocolate Cookies

Combine sugar, margarine, cocoa and milk in a large saucepan.  Boil 1 minute, stirring constantly.  Add vanilla, salt, peanut butter, and oatmeal.  Stir thoroughly to combine all ingredients.  Drop by tablespoonfuls onto waxed paper.

Praline Cookies Recipe

Praline Cookies Ingredients

  • 1/2 cup butter
  • 1 1/4 cup brown sugar
  • 1 egg
  • 1/2 tsp. baking soda
  • 1 3/4 cups flour
  • 1 tsp. vanilla
  • 1 cup pecan

Directions for Praline Cookies

Cream butter, add sugar and egg.  Blend, then add flour, vanilla and nuts.  Mix well.  Shape into walnut size balls.  Place on a buttered cookie sheet and flatten to 1/8 inch thick.  Bake at 375 degrees for 12 minutes.

Peach Pecan Pie Recipe

Peach Pecan Pie Ingredients

  • 1/4 cup butter or margarine
  • 1/4 cup sugar
  • 2 Tbsp. Flour
  • 1/2 cup light corn syrup
  • 1/4 tsp. salt
  • 3 eggs
  • 1 1/2 cups diced fresh peaches
  • 1 unbaked 9-inch pie shell
  • Nut Crumb Topping

Peach Pecan Pie Directions

Cream together butter, sugar and flour.  Stir in syrup and salt.  Mix well.  Beat in eggs, one at a time until just blended.  Add peaches and pour into pie shell.  Sprinkle with topping.

Nut Crumb Topping for Peach Pecan Pie

  • 1/2 cup flour
  • 1/4 cup brown sugar
  • 2 Tbsp. butter
  • 1/2 cup chopped pecans

Combine flour and brown sugar.  Work in butter until crumbly, add pecans.  Sprinkle over top of pie.  Bake at 400 degrees for 35 minutes or until knife comes out clean when inserted halfway between center and edge of pie.

Chocolate Crumble Bars Recipe

Chocolate Crumble Bars Ingredients

  • 1/2 cup butter or margarine
  • 2 eggs
  • 3/4 cup flour
  • 2 Tbsp. cocoa
  • 1/4 tsp. salt
  • 3/4 cup sugar
  • 1 tsp. vanilla
  • 1/2 cup chopped nuts
  • 1/4 tsp. baking powder
  • 6 oz. chocolate chips
  • 1 cup peanut butter
  • 1 1/2 cups rice krispies
  • tiny marshmallows

Chocolate Crumble Bars Directions

Mix, spread in 9 X 13 inch greased pan.  Bake at 350 degrees for 15 to 20 minutes then test.  Sprinkle 2 cups tiny marshmallows over top and bake 3 minutes longer.  Cool.  In saucepan combine chocolate chips, peanut butter and melt over low heat.  Stir in rice krispies and spread over cool bars.

Pumpkin Nut Bars Recipe

Pumpkin Nut Bars Ingredients

  • 1/2 cup shortening
  • 1 cup brown sugar
  • 1 cup flour
  • 1/2 tsp. baking powder
  • 1/4 tsp. ginger
  • 1/4 tsp. salt
  • 1/4 tsp. nutmeg
  • 2/3 cup pumpkin, mashed
  • 2 eggs
  • 1 tsp. vanilla
  • 1/2 cup chopped nuts

Pumpkin Nut Bars Directions

Combine all ingredients except nuts in a large mixing bowl.  Beat for 2 minutes with electric mixer at medium speed.  Fold in nuts.  Spread evenly in a 13 X 9 inch pan.  Bake at 350 degrees for 20 to 25 minutes.  Spread with orange frosting.

Orange Frosting

  • 2 Tbsp. butter
  • 1 Tbsp. grated orange peel
  • 1 1/2 cups powdered sugar
  • 2 Tbsp. orange juice

Blend until smooth

Rhubarb Torte Recipe

Rhubarb Torte Ingredients

  • 3 cups fresh chopped rhubarb
  • 1 1/2 cups sugar
  • 2 Tbsp. cornstarch
  • 1/2 cup water
  • 1 1/2 cups oatmeal
  • 1 cup brown sugar
  • 1 1/2 cup flour
  • 1 cup shortening
  • 1 tsp. baking soda

Rhubarb Torte Directions

Mix rhubarb, sugar, cornstarch and water and cook until bubbly.  Mix the rest of the ingredients until crumbly.  Put 3/4 of the crumbly mixture in an ungreased 9 X 13 inch pan.  Pour rhubarb mixture over and cover the with the rest of the crumbs.  Bake for 20 minutes at 350 degrees.  Top Rhubarb Torte with ice cream.

Pumpkin Cake Recipe

Pumpkin Cake Ingredients

  • 3 cups flour
  • 2 tsps. baking soda
  • 3 tsps. cinnamon
  • 2 tsps. baking powder
  • 1 tsp. salt
  • 4 eggs, beaten
  • 2 cups sugar
  • 2 cups canned pumpkin
  • 1 1/4 cups cooking oil
  • 1/2 cup chopped nuts
  • 1/2 cup chocolate chips

Pumpkin Cake Directions

Sift flour, soda, cinnamon, baking powder and salt together twice.  Beat eggs and sugar well, add pumpkin and oil.  Blend in flour mixture, reserving 1/4 cup flour to coat nuts and chips.  Fold in floured nuts and chocolate chips.  Bake in 10-inch tube pan that has been well greased and floured.  Bake at 350 degrees for 60 minutes or until done.

Pineapple Pound Cake

Pineapple Pound Cake Ingredients

  • 1/2 cup shortening
  • 1/2 pound butter
  • 2 3/4 cups sugar
  • 6 large eggs
  • 3 cups flour, sifted
  • 1 tsp. baking powder
  • 1/4 cup milk
  • 1 tsp. vanilla
  • 3/4 cup undrained crushed pineapple and juice

Pineapple Pound Cake Directions

Cream shortening, butter and sugar.  Add eggs, one at a time, beat thoroughly after each addition.  Add flour sifted with baking powder, one spoonful at a time, alternately with milk.  Add vanilla, stir in crushed pineapple and juice and blend well.  Pour batter into a well greased 10-inch tube pan.  Place in cold oven.  Bake at 325 degrees for 1 1/2 hours or until top springs back when touched lightly.  Let stand a few minutes in pan.  Run knife around edges and remove carefully to rack.

Topping

  • 1 cup crushed pineapple, drained
  • 1/2 cup pecans, chopped
  • 1 1/2 cups sifted powdered sugar
  • 1/4 cup butter, melted

Combine butter, powdered sugar and drained pineapple.  Pour over cake while hot, then sprinkle with pecans.

Chocolate Pecan Pie Recipe

Chocolate Pecan Pie Crust Ingredients

  • 1/4 tsp. salt
  • 1/4 cup cold water
  • 7 Tbsp. shortening
  • 1 1/2 cups flour, sifted

Mix salt and flour in a mixing bowl.  Cut shortening into flour until mixture is in pea-sized bits.  Sprinkle water over flour mixture by tablespoons, stirring with fork until just enough has been added so that you can pat the dough lightly together to form a ball.  Roll out on floured waxed  paper to fit a 9-inch pie pan.  Chill crust while preparing filling.

Chocolate Pecan Pie Filling

  • 2 Tbsp. butter
  • 1 1/2 oz. unsweetened baking chocolate
  • 3 eggs, beaten
  • 3/4 cup sugar
  • 1 tsp. vanilla
  • 1 1/3 cups pecans, chopped

In a heavy bottom saucepan, melt butter and baking chocolate together over low heat, stirring constantly.  Add remaining ingredients, mixing well and add pecans last.  Pour into chilled pie crust.  Bake in a preheated 400 degree oven for 15 minutes.  Reduce heat to 350 degrees and bake 30 to 35 minutes longer.  Makes 8 servings.
