Lime Squares Recipe

Lime Squares Ingredients

  • 1 cup flour
  • 1/2 cup butter
  • 1/4 cup sugar
  • 1/2 cup chopped pecans

Topping

  • 2 eggs
  • 2 Tbsp. lime juice
  • grated rind of 1 large lime
  • 1 cup sugar
  • 2 Tbsp. flour
  • 1/2 tsp. baking powder

Lime Squares Directions

Mix flour, butter, sugar and pecans and press into greased and floured 8 X 12 inch baking dish.  Bake for 15 minutes at 350 degrees.  Beat 2 eggs with fork with 2 tablespoons lime juice, lime rind, sugar, flour and baking powder.  Pour this over baked mixture and bake for 25 minutes in 350 degree oven.  When cool, sprinkle with confectioners’ sugar and cut into squares.  Make 40 lime squares.

Apple Bread Recipe

Apple Bread Ingredients

  • 2 cups sifted flour
  • 1 tsp. salt
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 3/4 cup butter
  • 2/3 cup sugar
  • 3 eggs
  • 1 1/2 cups peeled, diced apples
  • 1/2 cup grated sharp cheddar cheese
  • 1/4 cup apple sauce
  • 1/4 cup chopped nuts
  • 1/3 cup raisins

Apple Bread Directions

Sift flour to measure.  Resift with salt, baking soda and baking powder.  Melt butter and add sugar, stir in eggs, apples, cheese, nuts and raisins.  Lightly stir in dry ingredients.  Pour into a buttered 9-inch loaf pan.  Bake at 375 degrees for 1 hour.  Remove from oven and sprinkle top with sugar and cinnamon, then return bread to oven for 5 minutes to brown sugar.

Peanut Butter Pie Recipe

Peanut Butter Pie Ingredients

  • 1 cup confectioners’ sugar
  • 1/2 cup creamy peanut butter
  • 3 eggs, separated
  • 2/3 cup sugar
  • 1/8 tsp. salt
  • 1/4 cup cornstarch
  • 2 cups scalded milk
  • 2 Tbsp. butter or margarine
  • 1/2 tsp. vanilla
  • 9-inch pie shell, baked and cooled
  • 1/4 tsp. cream of tartar

Peanut Butter Pie Directions

Blend together confectioners’ sugar and peanut butter until it’s a coarse, crumbled mixture.  Beat egg yolks until fluffy.  Combine sugar, salt and cornstarch and  beat into egg yolks then beat in hot milk gradually.  Cook over hot water until smooth and thick, stirring constantly.  Remove from heat.  Add butter and vanilla.  Cover bottom of pie shell with 2/3 of the peanut butter mixture.  Pour in the hot custard.  Beat egg whites and cream of tartar until stiff.  Spread on top of filling, then sprinkle the remaining 1/3  of the peanut butter mixture over the top.  Bake at 350 degrees for 12 to 15 minutes or until brown.

Apricot Nut Bread Recipe

Apricot Nut Bread Ingredients

  • 3 cups sifted flour
  • 1 cup sugar
  • 3 1/2 tsp. baking powder
  • 1 1/2 tsp. salt
  • 2 eggs, beaten
  • 3/4 cup milk
  • 1 6-oz. can concentrated orange juice
  • 2 Tbsp. salad oil
  • 1 6-oz package soft cream cheese
  • 3/4 cup chopped nuts
  • 3/4 cup chopped dried apricots

Apricot Nut Bread Directions

Sift dry ingredients together.  Combine eggs, milk, orange juice, oil and cream cheese.  Add to dry ingredients, mixing well.  Stir in nuts and apricots.  Turn into 2 greased loaf pans.  Bake in 350 degree oven for about 1 hour or until golden.  Remove from pan and cool on wire rack.

Butterscotch Frosting Recipe

Butterscotch Frosting Ingredients

  • 2 cups light brown sugar
  • 2 Tbsp. light corn syrup
  • 1/4 cup shortening
  • 1/4 tsp. salt
  • 1 cup sugar
  • 3/4 cup milk
  • 1/4 cup butter or margarine

Butterscotch Frosting Directions

Mix well in a saucepan and bring slowly to a a full rolling boil, stirring constantly.  Boil briskly for 2 minutes.  Cool to lukewarm, then add 1 tsp. of vanilla and beat until creamy and thick enough to spread.  Makes enough butterscotch frosting for tops and sides of two 9″ layers.

Pecan Bars Recipe

Pecan Bars Ingredients

  • 1 cup butter or margarine
  • 1/2 cup powdered sugar
  • 2 cups flour
  • 1 1/4 cup pecans
  • 3 eggs
  • 1 1/4 cup brown sugar
  • 2 Tbsp. flour
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 1 tsp. vanilla

Pecan Bars Directions

Mix butter, powdered sugar, 2 cups flour to a dough and press into a 9 X 13 inch pan, ungreased.  Bake for 15 minutes at 350 degrees.  While baking, mix eggs, brown sugar, 2 Tbsp. flour, baking powder, salt and vanilla.  Beat well, then add pecans and spread on hot crust.  Return to oven and bake 20-25 minutes.  Cool and cut into small bars.

Angel Cookie Recipe

Angel Cookie Ingredients

  • 1 cup white sugar
  • 1 cup brown sugar
  • 2 cups shortening
  • 2 eggs
  • 1/2 tsp. salt
  • 4 cups flour
  • 1 tsp. cream of tartar
  • 1 tsp. baking soda
  • 1 cup chopped nuts
  • 1 tsp. vanilla

Angel Cookie Directions

Mix all the ingredients then make balls the size of walnuts, dip in water and then in sugar.  Put balls on a cookie sheet, sugar side up.  Bake at 350 degrees for 8 to 10 minutes or until browned.

Chocolate Icing for Brownies

Chocolate Icing Ingredients

  • 1 Tbsp. melted butter
  • 3/4 cup confectioner’s sugar
  • 1 1/2 Tbsp. water
  • 1 tsp. corn syrup
  • 1/2 tsp. vanilla
  • 1 square melted chocolate 

 Blend until smooth enough to spread over Brownies.

Banana Icing Recipe

Banana Icing Ingredients

  • 1 Tbsp. butter
  • 1/2 mashed banana
  • 1 Tbsp. lemon juice
  • 1 cup powdered sugar

Mix ingredients together and spread over Banana Cupcakes or any other cake.

Cream Cheese Frosting

Cream Cheese Frosting Ingredients

  • 8 oz. package cream cheese
  • 3 1/2 cups powdered sugar
  • 2 teaspoons vanilla

Mix until smooth enough to spread.  Cream Cheese frosting is great on Carrot Cake or any cake of your choice.
